At MCC, we have workers in more than 50 countries around the world, this fall we asked some of them to share their favorite recipes from the country where they work, and tell us what's so special about the dish. Carol Zook, MCC worker in India chose Papri Chaat.

Carol was drawn to the community that surrounded the recipe.

Papri Chaat is often eaten as "street food" when friends are out together.   It is also served as a snack when you go to someone's home.   I love all the flavors of the food and I think of it as a food that is served and enjoyed when friends are together.  It is a symbol of the hospitality of the people of India. 



1 1/4 cups flour
2 tablespoons vegetable oil
1/2 teaspoons salt
1/3 cup lukewarm water

Papri chaat:

I large potato, mashed
1 cup plain yogurt
1 teaspoon chaat masala
dash of salt
1 onion



  1. Make a firm dough from the papri ingredients and let sit for at least 15 minutes.
  2. Roll into a thin sheet. Cut out circles and prick all over.
  3. Fry the papri in oil until golden brown.
  4. Combine mashed potato, yogurt, chaat masala, and salt.
  5. Spoon onto papri.
  6. Sprinkle with chopped onions and coriander. 
  7. Top liberally with haldiram bhujjia if available.
